Inji Thayir With Coconut


Inji Thayir is an delicious healthy and traditional Kerala style Pachadi(raita) made with curd(yogurt) and ground ginger coconut paste. This ginger pachadi is an essential part of Onam Sadya menu.It aids digestion and increases the appetite.There is another simple variation of this recipe which is to sauté finely chopped ginger and mix with yogurt and temper with spices.Both these variations are completely delectable, but if you want rich taste I would recommend that you try this recipe which uses coconut.Check out how to make this yummy Kerala style inji thayir recipe below.

Ingredients

To Grind-

Ginger-2 inch piece

Green chilli-1 no 

Curry leaves few 

Grated coconut-2 Tbsps 

Salt to taste 


Other Ingredients-

Curd -1/2 cup slightly whipped

Mustard seeds-1/4 tsp 

Red chilli-1 no 

Green chilli-1 no 

Curry leaves few

Coconut oil-1 tsp

Method

👉Place all the ingredients given for grinding in a mixie jar add very little water and grind to fine paste.



👉Transfer the ground paste to a mixing bowl, to this add slightly whipped curd and mix well.




👉Now heat coconut oil in a tadka pan add mustard seeds,red chilli, green chilli, curry leaves and add this tempering to the curd mixture.




👉Mix well and serve.
