Pav Bhaji Recipe | Mumbai Street Style Pav Bhaji


Pav bhaji


Pav bhaji is a lipsmacking popular street food of India. It originated in Maharashtra especially Mumbai. It is prepared with a spicy delectable mixed vegetable gravy (called bhaji) and served along with toasted eggless bread rolls called pav with generous dollop of butter.

 Ingredients

Pav bun (bread rolls) - 4-6 nos 

Potatoes-2-3 nos skin removed and chopped

Carrot-2 nos chopped

Beetroot-1/2 no chopped

Tomato-2-3 nos chopped 

Capsicum -1 no (medium or 1/2 cup) chopped finely

Peas -1/2 cup 

Onion -2 -3 nos finely chopped  

Cumin seeds-1 tsp

Green chillies- 2 nos finely chopped 

Ginger garlic paste-1 Tbsp

Kashmiri chilli powder-1-2 tsps 

Ready made pav bhaji masala-2-3 tsps 

Salt to taste

Kasuri methi leaves few crushed 

Coriander leaves handful chopped fine 

Butter -3 Tbsps ( add more if you like)

Oil -2-3 tsps 

Lemon juice-1/2 lemon (or as required)

Method 

 👉Heat tsp of oil in a pressure cooker add cumin seeds allow it to splutter.Add potatoes, beetroot, carrots, tomatoes, green peas.Next add 1 tsp Kashmiri chilli powder and 1 tsp pav bhaji masala powder, turmeric powder saute for few seconds.



👉Add 1 1/2 cups of water and pressure cook for 4 whistles switch off the gas and allow the pressure to subside completely.




👉Mash the veggies well.




👉Simultaneously heat tsp of oil and 3 Tbsps of butter in a kadai add chopped onions and saute well until onions turn translucent.



👉Add green chillies and capsicum and saute well until the capsicum is 3/4 th done. 




👉Next add ginger garlic paste,a tsp of Kashmiri chilli powder and 2-3 tsps of pav bhaji masala powder, kasuri methi, coriander leaves and salt mix well saute for few seconds.


👉Add 1/2 cup water and cook the masala for 2 mins.



👉Now add the cooked and mashed veggies mix everything well and again mash well.



👉Add 1/2-3/4 cup of water and cook for 10 mins until the gravy comes to perfect consistency.




👉Add lemon juice and garnish with coriander leaves and switch off the gas.






👉Heat a tawa add tsp of butter once it melts add tbsp of bhaji gravy (or you can just sprinkle pav bhaji powder) and chopped coriander leaves. Now add cut pav bun and toast both the sides until light golden brown and remove from fire.







👉In a plate keep the pav bun and add bhaji gravy and serve along with a dollop of butter, chopped onions and lemon wedges. Enjoy.

Note -

✍️You can add red food colour if you like.

✍️You can use cauliflower too along with other veggies.

✍️Adjust the quantity of veggies , pav bhaji masala powder and lemon juice according to your taste preference.

✍️Be generous with butter to get rich taste.

✍️Adding kasuri methi and Kashmiri chilli powder is a must.
