Pudalangai Molagootal | Snake Gourd Pepper Masala | Palakkad Molagootal Recipe
Molagootal is a classic Palakkad style kootu or gravy that is both tasty and nutritious. Toor dal, special coconut masala paste, and
any vegetable or greens of your choosing are used to make this dish.Here I have used pudalangai or Snake Gourd for this recipe. The procedure is the same for all molagootal types.This recipe was made in a pressure cooker.This pudalangai molagootal is delicious with hot steamed rice drizzled with ghee, but it can also be served as a side dish with chapati, poori, dosa, and other Indian dishes. Ingredients
Snake gourd (pudalangai)-2 nos medium sized
Toor dal -1/4-1/2 cup cooked and mashed
Mustard seeds-1/2 tsp
Urad dal-1 tsp
Red chilli-1 no
Curry leaves few
Salt to taste
Coconut oil-1 Tbsp
For Masala(Roast in 1 tsp coconut oil and grind to fine paste)-
Urad dal -1 1/2 Tbsp
Cumin seeds-1 tsp
Pepper-1/2-3/4 tsp
Red chillies-3 nos
Raw rice -1 tsp
Grated coconut-2-3 Tbsps

Method
👉Pressure cook the dal for 5 whistles, mash well and set aside.
👉Scrape the outer skin of the snake gourd, cut length wise in the center and remove the seeds then chop the snake gourd into small cubes set aside.
👉Heat a tsp of coconut oil in a pan add urad dal and saute until it changes to light golden brown colour next add cumin seeds, peppercorns,red chillies,raw rice and sauté for 2 mins in medium flame.
👉 Finally add the grated coconut and saute for few seconds,remove from fire and transfer the contents to a mixie jar, allow it to cool down a bit and then add little water and grind to fine paste, set aside.
👉Now in a pressure cooker add the snake gourd, turmeric powder, salt and little water just enough to cover the veggie. Pressure cook for 3 whistles switch off the gas and allow the pressure to subside completely.
👉Once the pressure is released open the cooker and again switch on the gas.
👉Now to this add the cooked toor dal, ground masala and mix everything well.
👉Simultaneously in a tadka pan heat coconut oil add mustard seeds, urad dal, red chilli and curry leaves, asafoetida and allow it to splutter.
👉Add this tempering to the molagootal mix well switch off the gas and serve hot with rice.

Note -
✍️You can use any vegetable of your choice or you can make a mixed vegetable molagootal too.
✍️You can make keerai (green leafy vegetable)molagootal .
✍️Adjust the spiciness according to your taste preference.
✍️ Snake gourd is a watery vegetable so don't add too much water for cooking.
