This semiya kesari or vermicelli kesari is a delicious and traditional Indian sweet that can be done very quickly. It is made with just two main ingredients like vermicelli and sugar. It is just like making regular rava kesari but here we use semiya or vermicelli instead of rava or sooji.This semiya kesari is one of the easiest sweet variety to make for beginners. Ingredients

Semiya (vermicelli)-1/2 cup roasted

Sugar-1/4-1/2 cup (add according to taste)

Ghee-2 Tbsps

Cardamom powder- 1/4 tsp

Kesari colour - 1/8 tsp

Salt a pinch

Cashews and raisins -few

Method

👉First heat a teaspoon of ghee and roast the cashews and raisins until golden brown colour transfer to a plate set aside.


👉In the same pan,add another teaspoon of ghee and roast the semiya until light golden brown colour. Transfer to a plate .




👉Now heat 3 cups of water and bring to a rolling boil.


👉Add food colour, cardamom powder,a pinch of salt and mix well 


👉Now add the roasted vermicelli mix well and cook covered for 2-4 mins.





👉Once the semiya is 3/4 th cooked and all the water is absorbed add the sugar and mix well. The mixture will become watery again so allow it to thicken. Add the remaining ghee if needed.





👉Add in the roasted cashews and raisins mix well.




👉Remove from fire and serve.
