Bottle Gourd curry | Lauki Ki Sabji | Surakkai Gravy In Pressure Cooker
This lauki sabji or bottle gourd curry is a yummy and healthy North Indian style side dish made with bottle gourd and masala spices in pressure cooker. This gravy is very easy to make and can be had with chapati, poori, roti, jeera rice and even with dosa appam, idiyappam etc.. Ingredients
Bottle gourd-1 no (skin removed and cut to cubes)
Onion -2 nos choppedTomato puree - from 3 tomatoes
Green chillies-2 nos slit lengthwise
Ginger garlic paste-1 tsp
Besan flour -1-2 Tbsps
Red chilli powder -1 tsp
Turmeric powder-1/2 tsp
Coriander powder-2 tsps
Cumin powder-1/2 tsp
Kashmiri chilli powder-1/2 tsp
Garam masala-1/2 tsp
Salt to taste
Jaggery -1 tsp (optional)
Cumin seeds-1 tsp
Oil -2 tsps
Ghee -1 tsp
Coriander leaves few

Method
👉Heat ghee+ oil in a kadai add cumin seeds allow it to splutter. Add green chillies.👉Add onions saute for a minute.
👉Add ginger garlic paste saute for few seconds.
👉Add tomato puree cook for a minute.
👉Add red chilli powder, turmeric powder, coriander powder,cumin powder, Kashmiri chilli powder and garam masala powder saute for few more seconds.
👉Add besan flour saute for a minute in low flame.
👉Add the chopped bottle gourd , required salt and 3/4 to 1 cup water just enough to cover the bottle gourd.
👉Pressure cook for 2 whistles and switch off the stove. Allow the pressure to subside.
👉Once the pressure is releases open the cooker and again switch on the gas and bring the gravy to boil until required consistency.
👉Add jaggery mix well .
👉Switch off the stove and then add lemon juice.
👉Garnish with coriander leaves and serve hot.
