Tawa Pulao/ Mumbai street style tawa pulov

Tawa Pulao is a mouthwatering and iconic street food from Mumbai that has captured the hearts of food lovers across India. This vibrant dish is a creative twist on the classic pulao, made by combining cooked rice with flavorful pav bhaji masala and sautéed vegetables on a flat griddle, or “tawa.” The large tawa used by street vendors infuses the dish with a unique aroma and smoky flavor that is hard to replicate but easy to enjoy at home.

This recipe is perfect for utilizing leftover rice and pav bhaji masala, making it an excellent option for a quick and satisfying meal. The addition of a variety of vegetables not only enhances the flavor but also adds a healthy touch to this street-style delight. Its spicy, tangy, and savory flavors, combined with the irresistible aroma of butter and spices, make tawa pulao a popular choice for casual dinners, potlucks, and lunchboxes.

Why is Tawa Pulao So Popular?

1. Unique Street Food Appeal: It combines the bold flavors of pav bhaji masala with the comfort of pulao.
2. Quick and Easy: With simple ingredients and minimal cooking time, it’s a perfect solution for busy days.
3. Flexible Recipe: You can customize it with your favorite vegetables or even add paneer for an extra touch.
4. Comfort Food: The buttery, spiced rice is a treat for the taste buds, satisfying cravings instantly.

Tips for Making Perfect Tawa Pulao

1. Use Leftover Rice: Day-old rice works best as it prevents the pulao from becoming mushy. If using fresh rice, let it cool completely before cooking.
2. Fresh Pav Bhaji Masala: Use good-quality or homemade pav bhaji masala for an authentic street-style flavor.
3. Cook on a Large Tawa or Wok: If you don’t have a tawa, use a wide, heavy-bottomed pan to ensure even mixing and cooking.
4. Generous Use of Butter: For the true street food flavor, don’t skimp on butter! It adds richness and aroma.
5. Customize Vegetables: Common choices include capsicum, peas, carrots, and tomatoes. Feel free to experiment with mushrooms, baby corn, or zucchini.
6. Add Lemon Juice: A dash of lemon juice at the end brightens the flavors and enhances the tangy notes.
7. Top with Coriander: Freshly chopped coriander leaves add a refreshing finish to the dish.
