Vellai Kurma, White Kurma


Vellai Kurma or white Kurma is a very simple mildly spiced and absolutely delicious side dish or kurma variety made with mixed vegetables and coconut paste.
This Kurma is called Vellai Kurma colloquialy as it white in colour. It is a very common side dish for chapati, idiyappam, appam etc served in many restaurants in South India .This recipe is super easy to make and can be done in a jiffy in pressure cooker. Ingredients

Mixed vegetables ( carrot,beans,peas,potato,Chow chow etc)-2 cups chopped
Onion -2 nos chopped
Ginger garlic paste-1 Tsp
Fennel seeds-1 Tsp
Cinnamon,cloves,bay leaf -2 nos each
Salt to taste
Oil -2 Tsps
Curry leaves and coriander leaves few

Grind Together-

Grated coconut-1/2 cup
Roasted poppy seeds-1 Tsp
Cashew- 5-6 nos

Method

👉Grind the ingredients given for grinding to fine paste adding little water.set aside.

👉Heat oil in a pressure cooker add fennel seeds, cinnamon, cloves,bay leaf and saute for few seconds.

👉Add green chillies, onion, curry leaves and ginger garlic paste saute.

👉Add all the veggies.


  👉Add required water just enough to cover the veggies.
 
👉Add salt.


👉Pressure cook for 3 whistles.


👉Release the pressure and again keep on fire add the ground coconut paste .Mix everything well.

👉Cook for 2-4 mins.
👉Garnish with coriander leaves.


👉Serve hot with idiyappam, appam, chapati etc.

Note -

✍️You can add any vegetable of your choice.
✍️Adjust the spiciness according to your taste.
✍️Remove the skin of carrot, Chow Chow and potatoes and then use .
✍️Keep the potatoes soaked in water until use to prevent browning.
✍️If you are using cauliflower cut them into florets and soak in slightly warm salted water until use wash well and then add.
