Thirattupal or thiratipal is a absolutely delicious South Indian sweet variety made with milk .This dish is very similar to Palkova but the only difference is

that here we add jaggery instead of sugar.It is a very traditional recipe and tastes amazing.Though it is a simple recipe it requires a lot of patience, time and constant monitoring to make it.Check out how to make this authentic and traditional thiratupal recipe below.

Ingredients

Full fat milk -1 litre
Jaggery syrup -1/4 cup
Ghee -1 tsp
Cardamom powder - a pinch(optional)

Method

👉Heat a pan add jaggery and 1/4 cup water to dissolve it.Bring to a boil remove from fire and strain the syrup to discard impurities.set aside and allow it to cool.


👉Now in a heavy bottom kadai / vessel pour milk allow it to boil in medium flame until it reduces to 1/4 of its quantity.keep stirring in-between and scrape the sides to the kadai for milk solids sticking on the sides.It takes around 45 mins to reduce .


👉Once all the water from the milk evaporates add cardamom powder and 1/4 cup of jaggery syrup mix well.


👉Add ghee mix well .


👉Allow the mixture to thicken .


👉Once all the moisture is absorbed the bubbling will stop and the mixture will form a mass.This is the perfect consistency to remove from fire.


👉Allow the thiratupal to cool down completely and store .

Preparation Time -1 hour
Yield for 1 litre milk -approx 200 gms of thiratupal
