Pancharatna dal is a nutritious, traditional and tasty dal variety from Rajasthan cuisine. It is made with a mixture of five protein-rich lentils (dals) such as toor dal, urad dal, bengal gram dal, moong dal and masoor dal. In Hindi "panch" means five and "ratna" refers to jewel or gem. Ingredients

Toor dal -2 tbsps
Bengal gram dal -2 tbsps
Green gram dal -2 tbsps
Whole black gram dal -2 tbsps
Masoor dal -2 tbsps
Tomato -1 no chopped fine
Ginger garlic paste -1 tsp
Red chilly powder -1/4 tsp
Dhaniya powder -1 tsp
Turmeric powder -1/4 tsp
Green chillies -2 nos slit
Red chillies -2 nos broken
Cumin seeds -1 tsp
Cinnamon,cloves,cardamom -2 nos each
Peppercorns -1/4 tsp
Coriander leaves few chopped
Salt to taste
Ghee -1 tbsp

Method

👉Wash and soak the dals together for 1 hour.
👉Pressure cook for 3 whistles by adding enough water to cover the dal , mash lightly, set aside.

👉Heat ghee in a kadai add cumin seeds, cinnamon, cloves, cardamon, peppercorns, red chillies and allow it to crackle.
👉Add green chillies, ginger garlic paste sauté for few seconds, add red chilly powder, turmeric powder,dhaniya powder and sauté well until oil oozes on top.
👉Next, add tomatoes and cook until they are mushy.

👉Add cooked dal, salt, mix well and bring to a boil.

👉Garnish and serve hot with chapati, poori, rice ,dosa, appam etc.
