Pudalangai Paruppu Poriyal / Snake gourd stir fry

Pudalangai paruppu poriyal is a very basic,easy to cook and delicious  South Indian stir fry variety.It is prepared by sauteing the snake gourd in coconut and red chilly paste until the masala changes colour and finally adding the boiled dal to it.
Pudalangai/ snake gourd is rich in vitamins,minerals like magnesium,calcium and phosphorus.
It is low in calories .It has reasonable amount of fibre in it.

Ingredients

Pudalangai ( Snake gourd )- 1/4 kg chopped
Green gram dal - 1/4 cup (boiled)
Turmeric powder -1/2 tsp
Salt to taste 
Mustard seeds-1/2 tsp
Bengal gram dhal -1 tsp
Urud dal -1 tsp
Cumin seeds -1 tsp
Red chilly -1 no
Curry leaves and Coriander leaves few chopped
Oil -1 tbsp

Grind Together-

Grated coconut -1/2 cup
Red chillies -4 nos

Method


👉Boil the green gram dal seperately until its 3/4 done drain the water set dal aside.

👉Grind the coconut and red chilly to a very coarse paste by just sprinkling little water.use the pulse button on the mixie.

👉Wash,remove the outer skin and seeds from the pudalangai and cut into small cubes set aside.
👉Heat oil in a kadai add mustard seeds,urud dal,bengal gram dal,cumin seeds,red chilly and curry leaves and allow it to crackle .

👉Add the pudalangai saute for a minute ,sprinkle little water close the kadai and cook for 5 mins until the pudalangai is 3/4 done.

👉Add ground paste ,salt and saute in slow flame for 5 -10 mins until the colour changes to light brown .

👉Add the cooked green gram dal, mix well.
Garnish and serve hot.


Preparation Time -20 mins
Serves -4
