Elai Kozhukattai
Elai kozhukattai is a very traditional South Indian kozhukattai /modak variety made by steaming the kozhukattai in banana leaf. The pooranam(stuffing) can be of your choice, here I have used simple sweet thengai ellu pooranam made with grated coconut, sesame seeds and jaggery. Ingredients
For stuffing
Grated coconut -1 cup
Jaggery -1/2 cup
Ellu/ sesame seeds-1 tsp
Cardamom powder -1/4 tsp
For Dough
Processed rice flour /idiyappam flour-1 cup
Gingelly oil -1 tsp
Salt -1/4 tsp
Hot water as required.
Method
For stuffing
👉Heat a kadai add the jaggery and 1/4 cup water allow the jaggery to dissolve and strain it to remove impurities set aside.
👉Now again in a kadai add grated coconut ,cardamom powder,sesame seeds and jaggery and cook for 5 minutes until all the moisture is absorbed and mixture is dry.stuffing is ready.
For outer dough
👉In a vessel add the processed rice flour,salt,gingelly oil and hot water little by little and make a soft dough.Cover it with cloth until use.
For Kozhukattai-
👉Wash and cut the banana leaf into small squares ,smear it with oil and keep it ready.
👉Now place a lemon sized ball of the dough on the banana leaf and spread it to poori shapes.
👉Remove from the leaves and serve.
