Pori Urundai
Pori Urundai is a traditional sweet made during Karthigai deepam festival as a neivadanam in Tamil Nadu. It is traditionally made with nel pori / arisi pori or aval pori since I didn't get that I have used regular puffed rice to make this urundai.Check out how to make traditional pori urundai recipe below.
Ingredients
Puffed rice -3 cups
Jaggery -3/4 cup
Cardamom powder-1/4 tsp
Dry ginger powder-1/2 tsp
Coconut pieces-2 tbsps (roast in ghee till golden brown)
Ghee-1/2 tsp

Method
👉Heat ghee and roast the coconut pieces to golden brown colour and set aside.
👉Boil the jaggery in 1/2 cup water for a minute strain it to remove impurities.
👉Again boil the jaggery syrup until HARD BALL STAGE (To check stage- pour a drop of jaggery syrup in a bowl of water if it holds shape and is hard then the syrup is ready ) immediately switch off the gas.
👉Add the cardamom powder,dry ginger powder,and roasted coconut pieces to the jaggery syrup and mix well.
👉Add the puffed rice and mix everything swiftly
👉 Allow it to cool for few seconds.
👉Grease your hands with ghee and make big lemon sized balls immediately( if it is sticky dust it with little rice flour and make balls).
