Karamani Sundal | Red Lobia Sundal

Karamani Sundal is a delicious healthy Sundal variety made during Navratri festival.This Sundal is typically made with Red lobia (also called karamani in Tamil )as the main ingredient.To prepare this Sundal you have to wash and soak the lobia overnight or atleast 4-6 hours.Then the next day drain the soaked water and wash well and add fresh water and pressure cook for 3 whistles and drain the water and set the lobia aside. Now grind a coarse paste of coconut, green chilies ,ginger and cumin seeds. Heat oil in a kadai give a basic tadka and add the cooked Karamani, required salt ,ground coconut paste , mix well and serve, that’s it a yummy healthy Karamani Sundal is ready. Ingredients

Karamani( red lobia)-2 cups
Mustard seeds-1/2 tsp
Salt to taste
Oil-1 tsp
Asafoetida-1/4 tsp 
Curry leaves few

Grind Together-

Grated coconut-2 tbps
Green chillies-2
Cumin seeds-1 tsp
Ginger-1 inch piece

Method

👉Wash and soak the karamani overnight or minimum 6 hours.
👉Pressure cook it for 3 whistles.drain excess water.
👉Grind the ingredients given for grinding to a fine paste by adding very little water set aside.
👉Heat oil in a kadai add mustard seeds, urud dhal,curry leaves, asafoetida and allow it to splutter.
👉Add the cooked karamani, coconut paste, salt saute for 2 mins.
👉Serve.
