Mixed Vegetable Masala Rice In Pressure Cooker

Mixed vegetable masala rice is an easy rice variety cooked in pressure cooker method.This is a healthy and tasty lunch box menu for your kids.

Ingredients

Seeraga Samba Rice-1 cup
Mixed vegetables (carrot, Cauliflower, beans, Potato, peas)-1 1/2 cups(chopped)
Onions-3 nos chopped
Curd-2 tbsps
Red chilly powder-1 tsp
Dhaniya powder-2 tsps
Turmeric powder-1/4 tsp
Garam masala powder-1/2 tsp
Jeera powder-1/2 tsp
Cinnamon-1
Cloves-4
Bay leaf-1
Coriander leaves few
Salt to taste
Oil+ghee-1 tbsp

Grind Together 

Grated coconut-4 tbsp
Green chillies-2
Ginger-1 inch piece
Garlic-4 cloves


Method

👉Wash and soak the rice for 10 mins.
👉Heat oil+ghee in a pressure cooker add cinnamon, cloves, bay leaf, onions and fry for a minute.
👉Add the vegetables and sauté for a minute.
👉Next, add the ground paste , salt and saute for few seconds.
👉Add all the masala powders followed by curd.
👉Now add the rice with 2 cups of water.



👉Pressure cook for one whistle.
👉Garnish and serve hot with onion raitha and chips.


Preparation time-20 mins
Serves-4

Note

✍️You can use basmati rice or ordinary raw rice too.
✍️Cook in medium flame.
