Kovakkai Chutney | Tindora Chutney | Ivy Gourd Chutney
Kovakkai or ivy gourd is a very nutritious vegetable, we usually make stir fry of it which is very common recipe but it can also be made into a very tasty chutney /thuvaiyal .
I got this recipe from my neighbour and now this chutney is a regular item in my family's menu.Kovakkai has numerous health benefits first it lowers blood sugar and blood pressure.
A certain compound in it helps to protect the nervous system.
It is very rich in protein thus help in muscular development.
Rich in fibre and
help in maintaining a healthy gut.
Rich in vitamin A ,C and B complex vitamins.
Rich in iron thus help prevent anemia and fatigue.

Ingredients
Kovakkai-1/4 kg chopped
Onions-2 nos chopped
Garlic-5 nos
Red chillies-5 nos
Green chillies-2 nos(optional)
Dhaniya seeds-1 tbsp
Tamarind-small gooseberry size
Salt-to taste
Oil-1 tsp
Mustard seeds-1/4 tsp
Curry leaves few
👉Allow it to cool add salt and tamarind ,grind to a fine paste adding very little water in mixie.
👉Temper it with mustard seeds and curry leaves.serve with idli, dosa,rice ,chapati poori etc.

Method
👉Heat oil in a kadai add onions,garlic, red chillies, green chillies, dhaniya and kovakkai and fry well until the kovakkai is cooked completely.👉Allow it to cool add salt and tamarind ,grind to a fine paste adding very little water in mixie.
👉Temper it with mustard seeds and curry leaves.serve with idli, dosa,rice ,chapati poori etc.
