Butter murukku is a delicious crunchy South Indian snack variety made during Diwali festival.It is made with processed rice flour, Bengal gram flour,fried gram flour which is mixed with butter and deep fried in oil. Check out how to make traditional butter murukku recipe below.
Ingredients
Processed Rice flour-2 cupsBesan flour-2 Tbsps
Fried gram flour -1 tsp
Butter -1 1/2-2 Tbsps
Salt-1/2 tsp
Cumin seeds-1-2 tsps
Asafoetida -1/8 tsp
Oil for deep frying

Method
👉In a bowl add all the flours, salt, cumin seed, asafoetida and butter and mix well without any lumps.👉Add water little by little and knead to a soft dough,cover it with a muslin cloth and set aside.
👉Heat oil in a kadai for deep frying. Grease the murukku maker with oil and fix the three star disc in it,and now fill the murukku maker with required amount of dough.
👉Press the murukku directly in hot oil as long strands,slow the flame while doing this.Keep in medium flame throughout.
👉Donot disturb the murukkus for few minutes.
👉Flip occassionally.
👉Fry till light golden brown colour and remove the murukkus from the oil after the oil stops bubbling.
👉Drain the excess oil in the murukkus using an absorbant paper.Break the butter murukku into the desired length.

Note-
✍️The consistency of the dough is very important for making this murukku, it should not be very hard or very soft so add water cautiously.
✍️If you are doing this murukku in large quantities knead the dough in small portions fry that batch and then knead the next otherwise the dough will dry up quickly.
✍️Keep the temperature of the oil in medium throughout.
✍️Don't disturb the murukkus immediately after adding to the oil leave them as such for a minute or two.
✍️Adding too much butter or water will disintegrate the murukkus while frying so add the required quantity only.
