Vegetable Masala Bhath | Mixed Vegetable Masala Rava Upma

Vegetable Masala Bhath

Vegetable Masala Bhath, also known as Mixed Vegetable Rava Upma, is a flavorful and satisfying traditional South Indian dish that adds a spicy twist to the regular Rava Upma. This recipe combines the goodness of semolina (rava/sooji), an assortment of colorful vegetables, and aromatic spices, creating a delicious one-pot meal that is perfect for breakfast, lunch, or dinner. It is a popular dish in many South Indian households, known for its comforting taste and nutritional value.

The preparation of Vegetable Masala Bhath begins with roasting the rava (sooji) in a pan until it turns slightly golden, which enhances its flavor and texture. In another pan, a tempering of mustard seeds, cumin seeds, and curry leaves is made. The tempering is then followed by the sautéing of finely chopped vegetables such as carrots, beans, peas, potatoes, and onions. You can customize the vegetables based on what you have on hand or your preferences.

The addition of spices such as turmeric, red chili powder, garam masala, and ginger adds depth and warmth to the dish, making it more flavorful and aromatic than a regular upma. The vegetables and spices are sautéed together, and then water is added to cook the rava. Once the water comes to a boil, the roasted rava is slowly added, stirring continuously to prevent lumps. The dish is cooked until the rava absorbs the flavors and becomes soft and fluffy. A garnish of fresh coriander leaves and a squeeze of lemon juice completes the dish, adding freshness and a tangy kick.

Vegetable Masala Bhath is not only delicious but also packed with nutrients. The combination of vegetables provides essential vitamins and minerals, while rava offers a good source of carbohydrates and energy. The spices, such as turmeric and ginger, have anti-inflammatory properties and contribute to digestive health.

This dish is an excellent choice for a wholesome and flavorful meal that’s easy to prepare and sure to please everyone in the family. You can serve it with coconut chutney or pickle for added taste.
