Maladu | Pottukadalai Ladoo
Maladu, also known as Pottukadalai Ladoo or Fried Gram Ladoo, is one of South India’s most beloved traditional sweets. Made with roasted gram dal (pottukadalai), sugar, and ghee, this melt-in-the-mouth sweet holds a special place in Tamil homes, especially during festivals like Diwali, Krishna Jayanthi, and Navaratri. Its simple ingredients and rich flavor make it a timeless treat enjoyed by all ages.
The word “maladu” comes from “maa” meaning flour, and “ladu” meaning sweet ball. True to its name, Maladu is made by grinding roasted gram into a fine flour and mixing it with sugar and ghee until it forms a soft, aromatic dough that can be shaped into ladoos. The recipe is quick, easy, and requires no laborious cooking, which is why it’s a favorite among beginners and experienced cooks alike.
What makes Pottukadalai Ladoo so special is its rich, nutty aroma and smooth, creamy texture. The roasted gram (also called fried chana dal or pottukadalai) is not just delicious—it’s also packed with protein, fiber, and essential nutrients, making this sweet both tasty and wholesome. When combined with pure ghee, it gets a soft, buttery flavor that simply melts in your mouth.
You can enhance the ladoo by adding cardamom powder for fragrance and chopped cashews for a light crunch. Some families also add a pinch of edible camphor for a traditional touch, giving it that authentic South Indian temple sweet aroma.
Unlike many sweets that rely on deep frying or heavy sugar syrup, Maladu is made without any frying or syrup preparation. It’s a beginner friendly recipe, and also a healthier and hassle-free sweet that can be prepared in minutes. It’s perfect for festive offerings, quick prasadams, or as an energy-boosting snack for children.
You can even make jaggery maladu as a variation for a healthier, earthy sweetness. The versatility of this sweet is what keeps it popular across generations.
Whether you’re preparing for a festive occasion or simply craving a quick homemade sweet, Maladu / Pottukadalai Ladoo is a perfect choice that combines taste, tradition, and nutrition in every bite.Check out the recipe below.
