Kovakkai varuval recipe or tindora fry

Kovakkai varuval is delicious traditional South Indian style stir fry variety. This tindora fry is a simple and basic recipe made with minimal ingredients. It is very easy to make. I have cooked the kovakkai in pressure cooker this makes the process even more quick and tastes more yummy.Make sure you add very little water just enough to cook the kovakkai. If you are not comfortable in cooking with pressure cooker you can cook directly in the kadai. Check out how to make this delicious crispy kovakkai varuval recipe below.


Ingredients

Kovakkai / tindora -1/4 kg chopped length wise

Onion-1 no chopped length wise

Ginger garlic paste-1 tsp

Red chilli powder-1 tsp

Turmeric powder-1/2 tsp

Salt to taste

Rice flour-1 tsp

Mustard seeds-1/2 tsp

Curry leaves few

Oil -2-3 tsps

Method

Pressure cook the kovakkai with just 1/2 -3/4 cup water and turmeric powder for 2 whistles and set aside.







Heat oil in a kadai add mustard seeds, curry leaves and allow it to splutter.




Add onion and saute well.




Next add ginger garlic paste and saute for few seconds.



Add red chilli powder and salt .




Now add the cooked tindora and mix everything well.(Note - If there is little water add it along with water but if there is more water after pressure cooking drain the water and use it in rasam )




Continue to saute in medium flame for 10 mins then finally add rice flour and then fry until the kovakkai changes colour and becomes crispy.






Serve hot.
