Mangai,kathiri,urulai masala or raw mango, brinjal, potato masala is a delicious and easy to make south Indian kara kari /stir fry variety. Adding raw mango to our regular kari/ stirfry enhances the taste to another level. Check out the recipe below.

Ingredients

Raw mango(Kili mooku manga)-1/2 diced to cubes
Brinjal -4 nos diced to cubes
Potato -2 nos diced to cubes
Tomato -1 no chopped
Ginger garlic paste -1 tbsp
Red chilly powder-1-2 tsps
Dhaniya powder -2 tsps
Turmeric powder -1/2 tsp
Mustard seeds-1/2 tsp
Cumin seeds-1 tsp
Red chillies -2 nos
Salt to taste
Oil -1 tbsp
Curry leaves and coriander leaves few.

Method

👉Wash and dice the mango, potato, brinjal to cubes, pressure cook for 1 whistle, discard the water (or use it in rasam)and keep the veggies aside.

👉Heat oil in a kadai add mustard seeds, cumin seeds, red chillies, curry leaves and allow it to crackle.
Add the tomatoes, ginger garlic paste and sauté well.

👉Add red chilly powder, dhaniya powder, turmeric powder and sauté for few seconds.

👉Add the cooked veggies, salt mix everything well.

👉Allow it cook for about 5 minutes in medium flame, add oil if too dry.

👉Garnish with coriander leaves and serve hot.
