Varagu Arisi Khara Pongal, also known as Kodo Millet Pongal, is a healthy and delicious variation of the traditional South Indian Ven Pongal. While the classic Ven Pongal is made with rice, this version uses Varagu Arisi (Kodo millet), a nutritious millet variety that is gaining popularity due to its numerous health benefits. Just like the regular Ven Pongal, Varagu Arisi Khara Pongal is cooked with moong dal, seasoned with ghee, cumin, pepper, and curry leaves, but with the added advantage of being made with this gluten-free, fiber-rich millet.

Ingredients

Varagu arisi( kodo millet)-1 cup
Green gram dhal-1/2 cup
Green chillies-2 chopped
Ginger-1 inch piece chopped fine
Cumin seeds-1 tsp
Peppercorns-1 tsp
Cashew-few
Curry leaves few
Salt to taste
Ghee-2 tbsps

Method

👉Wash the kodo millet 3-4 times and soak it along with washed dhal for 10 mins.


👉Heat ghee in a pressure cooker add cumin seeds, peppercorns, green chillies, ginger, cashews,curry leaves and sauté well , next add the Kodo millet and dhal without WATER and fry for a minute.


👉 Add 4 -5 cups of water, required salt and close the cooker and pressure cook for 3-4 whistles.


👉Once the pressure is released mash the pongal slightly. if needed add extra ghee .
  
👉Serve hot with tomato chutney or coconut chutney.
