Chow chow carrot kootu is a very healthy and traditional South Indian kootu variety. Chow chow also known as

chayote is a fibre rich vegetable and can be used in variety of recipes.This chow chow carrot kootu is one such delicious traditional recipe that is very simple and easy to prepare.It comes packed with nutrients and is high in protein,vitamins and fibre . It not only satiates hunger but also helps in healthy weight loss .Check out how to make this yummy traditional chow chow carrot recipe below.


Ingredients 

Chow chow(chayote)-1 cup (diced into small cubes )
Carrot-1 cup (diced into small cubes)
Green gram dhal( passi paruppu)-1/2 cup
Chilly powder - 1/2 tsp
Mustard seeds -1/2 tsp
Grated coconut -1 tbsp
Salt
Oil-1 tsp
Asafoetida-1/4 tsp 
Curry leaves, coriander leaves-few

Method 

👉Cook the green gram dhal and set aside.
👉Cook the chow chow and carrot together in a pressure cooker for 3 whistles adding just enough water to cover the veggies.
👉Now remove the lid add the cooked dhal, chilly powder, and salt mix well. Next temper with mustard seeds, curry leaves, and asafoetida add it to the kootu, and finally add the grated coconut. Garnish and serve hot.

Variation-

Instead of adding red chilly powder, you can add ground {grated coconut(1/4 cup), green chillies(2nos), jeera (1 tsp ) raw rice ( 1 tsp) } paste to the kootu and the rest of the method is the same.
