Ompodi | Besan Sev | Omapodi
Ompodi/ omapodi also known as Besan Sev, is a popular South Indian snack made from gram flour (besan), spices, and a hint of ajwain (carom seeds). This crunchy, golden treat is light, flavorful, and a must-have during festivals like Diwali and Navratri. The dough is then pressed through a sev maker or murukku press into hot oil, where it fries instantly to a beautiful golden-yellow color. Ompodi is incredibly versatile. In Tamil Nadu, it’s a key ingredient in South Indian mixture, while in North India, its close cousin Sev is used in many street food delicacies like sev puri, dahi papdi chaat, and ragda pattice. Ingredients
Besan flour -1 cup
Rice Flour-1/4 cup
Omam (Ajwain)-1 tsp
Turmeric powder -1/4 tsp
Asafoetida -1/4 tsp
Salt-1/2 tsp
Hot Oil or softened butter-1 Tbsp
Oil for deep frying

Method
✍️Soak the ajwain or omam in water for 15 minutes.
✍️In a mixing bowl add besan flour, rice flour, turmeric powder, asafoetida, salt mix well.( Note: you can pass all the ingredients through a sieve for even mixing).
✍️Add a tablespoon of hot oil or softened butter mix well.
✍️Now strain and add the only omam water mix well.
✍️Add required water little by little and knead to soft dough. keep covered with muslin cloth until use.
✍️Grease the murukku acchu with oil and add the ompodi maker disc or acchu inside it.
✍️Fill a portion of the dough into the murukku maker.
✍️Heat oil in a kadai for deep frying and once the oil is hot keep in medium flame throughout.
✍️Now carefully press the dough directly into the oil in big circular motion for two rounds.
✍️Don't disturb for few minutes .
✍️Then flip the ompodi and cook on both sides until you get a nice golden-yellow colour and till the oil stops bubbling.
✍️Remove the omapodi from the oil and transfer to a plate lined with tissue paper to absorb extra oil.
✍️Cool and crumble the omapodi, store in airtight container.
