Chettinad potato fry or roast is an delicious traditional Chettinad style dish made with baby potatoes and special Chettinad spice masala powder. This is a fairly simple dish and can be done quickly. For this recipe we make a special flavourful spice masala powder that is the star of this dish. Moreover traditionally we use baby potatoes for this dish but you can use diced regular potatoes too. Furthermore we have to be cautious while dry roasting the masala spices making sure not to burn them.This Chettinad Urulai fry goes very well with sambar rice, rasam, curd etc.. Ingredients

For masala-(Dry roast and powder)

Urad dal-1-2 Tbsps 

Coriander seeds-2 Tbsps 

Cumin seeds-1 tsp 

Fennel seeds-1-2 tsps 

Pepper-1/2-1 tsp 

Cinnamon-2 nos 

Cloves-4 nos 

Cardamom-2 nos 

Red chillies-4-6 nos 


Other Ingredients-

Boiled and peeled baby potatoes -1/2 kg 

Onion -1 no chopped

Mustard seeds-1/2 tsp 

Cumin seeds-1/2 tsp 

Turmeric powder-1/2 tsp

Salt to taste

Curry leaves and coriander leaves few 

Oil -3-4 Tbsps

Method 

👉Boil or pressure cook the baby potatoes remove skin and set aside.


👉Dry roast the ingredients given under for masala until golden brown colour and powder slightly coarsely, set aside.


👉Heat oil in a kadai add mustard seeds,cumin seeds, curry leaves and allow it to splutter.Add onion and sauté well until the onions turn translucent.


👉Add the cooked potatoes and sauté for 5 mins until you get light golden brown colour in medium flame.



👉Now add turmeric powder, salt and ground masala powder as required ( just 2-3 tsps store the remaining for future use).Mix well and continue to roast in low flame for another 5 mins. Add extra oil for roasting if needed.


👉Garnish with coriander leaves and switch off the gas.




Serve.

Note -

You can prepare the spice masala powder in bulk and store in airtight container for future use.You can use this powder in variety of dry curry recipes.
