Ginger thogayal or inji thuvaiyal or ginger chutney

Ginger thogayal or inji thuvaiyal or ginger chutney is a healthy spicy, tangy,sweet South Indian chutney variety. This ginger chutney is given as a home remedy to treat digestive problems. It also increases the immunity.Prevents throat infections.
This Inji thuvaiyal is a bit spicy so adjust the amount of red chillies accordingly. Moreover add jaggery and tamarind to balance the taste. Check out how to make this yummy ginger thogayal recipe below.


Ingredients

Ginger -1/2 cup chopped
Onion-1 no chopped
Tomato-1 no chopped
Red chillies-4-5 nos
Tamarind-small gooseberry sized
Jaggery-1 Tbsp
Urad dal-1 tsp
Bengal gram dal-1 tsp
Salt to taste
Oil-2-3 tsps

For Tempering

Mustard seeds-1/4 tsp
Urad dal-1/2 tsp
Curry leaves few
Oil-1 tsp

Method

👉Heat oil in a kadai add urad dal, bengal gram dal and saute until golden colour.

👉Add onion saute well.

👉Add ginger saute until raw smell goes.

👉Add tomatoes saute until mushy.

👉Add red chillies.

👉Add tamarind piece.

👉Add salt and jaggery saute for few seconds.

👉Switch off the gas and transfer the ingredients into mixie jar and allow it to cool a bit.

👉Grind to fine paste without adding water.

👉Now for tempering heat oil in a kadai add mustard seeds, urad dal and curry leaves allow it to splutter add this to the ginger thogayal.

👉Serve with idli, dosa, pesarettu ,pongal etc.
