Method

1. Wash the horse gram (kollu) thoroughly and soak it overnight or for at least 2 hours in hot water. Drain the soaking water, rinse the horse gram once again, and keep it aside.

2. Heat 1 teaspoon of ghee in a pressure cooker. Add cumin seeds, black pepper, cinnamon, cloves, garlic, shallots, and tomatoes. Sauté for about a minute until fragrant.

3. Add the drained horse gram, a handful of coriander leaves along with the stems, salt to taste, and 2 cups of water. Mix everything well.

4. Close the lid and pressure cook for 7–8 whistles. Switch off the heat and allow the pressure to release naturally.

5. Once cooled, strain the cooked horse gram and vegetables, reserving the cooking stock separately.

6. Transfer the cooked horse gram mixture to a blender. Add a little of the reserved stock and blend into a smooth paste.

7. Pour the ground paste into a saucepan. Stir in the remaining cooking stock and add more water if needed to adjust the consistency.

8. Taste and adjust the salt if required. Bring the soup to a gentle boil over medium heat.

9. Garnish with freshly chopped coriander leaves and serve hot.
