Chutneys are a daily essential in South Indian homes, and this peanut-tomato version is a fantastic twist on the traditional coconut chutney. Peanuts don't just add that wonderfully rich and creamy texture; they also pack this chutney with plant-based protein, healthy fats, and fiber. And those juicy tomatoes? They bring a natural tanginess and are loaded with antioxidants like lycopene and vitamin C. Talk about a win-win!

Then, sauté onions, garlic, red chilies, and ripe tomatoes in a little oil until they're soft and mushy. Once that's done, simply blend everything with a bit of salt and a splash of water until you have a smooth paste. To finish, a simple tempering of mustard seeds, curry leaves, and urad dal poured over the chutney adds an extra layer of flavour , a little crunch, and an amazing aroma.

This no-coconut chutney is ideal if you're looking for something with a longer shelf life and a wonderfully nutty richness. It's also a fantastic choice for anyone following a vegan, vegetarian, or gluten-free diet.
