Ulundu Kara Kozhukattai | Urud dal Modak
Ulundu kara kozhukattai is yet another delicious traditional savoury South Indian kozhukattai variety made with urad dal and red chillies as stuffing or pooranam. Learn how to make this delicious ulundu kozhukattai below.
Ingredients
For Stuffing / puranam
Urad dal -1/2 cup
Red chillies -2 -3 nos
Green chillies-1 no finely chopped
Mustard seeds-1/2 tsp
Cumin seeds-1/2 Tsp
Curry leaves few finely chopped
Asafoetida-1/4 Tsp
Salt to taste
For Dough-
Processed rice flour/idiyappam flour/ kozhukattai flour -1/2 cup
Salt to taste
Gingelly oil -1 -2 tsps
Hot water as required

Method
For stuffing-
👉Wash and soak the dal for 1 hour.
👉Drain the water completely and grind it to a very coarse paste along with red chillies and little salt.
👉Heat oil in a kadai add mustard seeds, cumin seeds, curry leaves,asafoetida and allow it to splutter , add the ground dal paste and sauté well for 5-7 mins in medium flame until the mixture dries up and raw smell goes.Set aside .
For Dough-
👉In a vessel add the processed rice flour,salt, gingelly oil and hot water little by little and knead to a soft dough.Cover it with a moist cloth for 5 mins. Then knead well.
For Kozhukattai-
👉Take a small lemon sized ball of the dough, roll it without any cracks then slightly flatten it, keep the stuffing (make small balls of the stuffing)in the centre of the dough and cover with the dough and make a ball again, keep it inside the modak mould gently press it and make kozhukattai shapes.
👉Steam the kozhukattai for 10 minutes (until they are non sticky and have a glossy sheen).
